Spicy Tandoori Macaroni: it’s an Indian, Italian food fusion courtesy of Zheelicious. Just like Zheel, I love pasta. I was getting bored of my usual chicken parmigiana and figured, what better time to try this fusion meal.
The recipe calls for garlic, onion, cumin seeds, red chili powder, and cilantro. These are the classic fix-ins for a South Asian curry. A dash of lemon, oregano, and red chili flake pay homage to the Italian cuisine.
Spices lined up, I then set-up two pots on the stove. One full of boiling water for the pasta and the next with oil to begin the sauce. The following steps are also quite familiar for a South Asian cook – cumin seed splatter, cook the onion and garlic till translucent. Add in tomatoes, spices, and water and the sauce is ready to meet the pasta.
I made a few additions to the dish. First, I added half a pound of ground beef, which I cooked up with salt and pepper. I also added a handful of cheddar cheese because I love cheese.
I served up the Spicy Tandoori Macaroni and it was a hit! My husband and I enjoyed the freshness of the cilantro and the earthiness of all the spices. The dish was familiar and comforting, perfect for the winter chill.
